The leading cause of blindness in the developed world is age-related macular degeneration (AMD). This disease may be prevented by simply increasing carotenoid consumption. This prospective cohort study used repetitive food frequency questionnaires to predict plasma carotenoid scores of individuals
over the age of 50 who were currently free of the eye disease, and the common pathologies linked with its development (e.g. diabetes). Higher carotenoid intakes over 20 years, were associated with greater visual acuity, with lutein and zeaxanthin proving to be the best performers producing a 40 percent reduction in cases of advanced AMD.

Good sources of lutein and zeaxanthin include kale, spinach, turnip greens, summer squash, pumpkin, paprika, yellow-fleshed fruits and avocado. Other foods rich in carotenoids include carrot, sweet potato, papaya, cantaloupe, oranges, tomatoes, watermelon and bell peppers.

So adding a side of spinach, avocado and squash to your eggs could go a long, and delicious way for conferring visual acuity!
