Banana, date and linseed muffins
12 tsp of linseeds
1 cup chopped dates
¼ cup boiling water
1–2 ripe bananas
60g melted butter (cooled)
3 tsp baking powder (gluten-free if required)
2 eggs
½ tsp nutmeg
Preheat oven to 180°C. Soak dates in boiling water. Grind linseeds until a fine meal.
Mash bananas, add nutmeg and combine well. Mix through the date mixture and melted butter.
Fold through the linseeds and baking powder, followed by the eggs.
Spoon about 2 heaped dessertspoons of the mixture into muffin tins lined with baking paper.
Bake for 25 minutes. Delicious eaten warm with a dollop of organic yoghurt!
