Buckwheat and red cabbage salad

Buckwheat is a most nutritious and often overlooked grain. Gluten free, it has a lovely nutty flavour and in high in dietary flavonoids, an excellent anti-oxidant.
Ingredients
1 cup of raw buckwheat kernels
¼ red cabbage
½ cup mint leaves
½ cup coriander leaves
¼ red onion finely sliced
1 cup rocket
3 stalks celery
10-12 baby tomatoes, or as many as you like
1 Tbsp of sesame seeds toasted.
Dressing
2 dessertspoons tamari
2 Tbls olive oil
1 tsp honey (optional)
Rinse buckwheat and place in a saucepan with water and boil for15-20 mins, until chewy and not too soft. Strain.
Slice all salad greens, cabbage and tomatoes. Whisk dressing ingredients and combine all ingredients in a salad bowl. Sprinkle with the toasted sesame seeds
