I’ve included below my own favourite dish…don’t moan for Brussels sprouts…which will transform your opinion of this undeservedly maligned sweet green bliss bomb!
Roasted Brussels sprouts with honey and dukkah
2 tbsp of extra virgin olive oil
30 smallish Brussels sprouts, trimmed and scored with a cross at the base
2 tbsp of your favourite fragrant honey
4 tbsp dukkah
3 tbsp tahini or hummus
Preheat oven to 180°C. Heat oil in a medium baking tray.
Add sprouts, season with salt and pepper.
Roast for 45 minutes, shaking tray from time to time.
Remove from oven and drizzle with honey while sprouts are hot. Toss in 2 tablespoons of dukkah. Spread tahini or hummus on a serving plate, pile on sprouts, sprinkle with remaining dukkah and serve.
You’ll never sneer at a Brussels sprout again after enjoying this dish!
