The green, green leaves of home!

I don’t think enough of you are eating sufficient greens, given the dearth of entries for my Super Salad competition in January!! Although, I admit, it may be shyness in sharing recipes.
Greens are crucial for health and should feature in at least two meal per day. And no, I don’t mean peas!
They are an excellent form of magnesium. Indeed the chlorophyll molecule is made up of two parts (this is what gives green vegetables their unique greenness). One ring of carbon and nitrogen atom with a magnesium atom at the centre, quite similar to the heme ring in the meat myoglobin pigment. Greens are also rich in B vitamins particularly folate, calcium (especially broccoli), iron and potassium, not to mention fibre!
Think of broccoli, spinach, kale (not raw), silverbeet, beetroot leaves, snow peas, rocket, endive, broad beans, Brussels sprouts. We have a plethora of delightful greens to choose from!
March is going to be our greening month! Yes, let’s all make an effort to ensure we see the delightful and enticing display of all the various, beautiful tones of green on our plates, bowls or glasses for at least two meals a day. Three even better!
